Amylase and glucoamylase enzymes assist in the digestion of the carbohydrate portion of grains (such as wheat) which often contain gluten. Glucoamylase is necessary to finish the digestion of those sugar and starch molecules to glucose, the simplest sugar used by the body for energy.

Gluten intolerance occurs when there is a difficulty in breaking down specific amino acid links (called peptides) in the gluten molecules.
